Ingredients

  • 1 kg mixed cleaned fish steaks
  • 700 g potatoes
  • 3 ripe tomatoes
  • 2 onions
  • 1 red pepper
  • 3 garlic cloves
  • 100 ml white wine
  • 60 ml olive oil
  • 2 bay leaves
  • Parsley and salt to taste

Step-by-step method

  1. Slice potatoes, onions and pepper; chop tomato and garlic.
  2. Layer onion, potatoes, tomato, pepper and fish in a wide pot, seasoning lightly between layers.
  3. Add garlic, bay, parsley, wine and olive oil, plus only a splash of water to start cooking.
  4. Cover and simmer moderately for 25–35 minutes; gently shake the pot rather than stirring and breaking up the fish.
  5. Check that both potatoes and fish are cooked, adjust seasoning and serve with the broth.
✦ Cooking tip

Use firm-fleshed fish; carefully remove bones when serving children.

A home-style version; regional and family variations are common. Check cooking times and food doneness before serving.
