Ingredients

  • 600 g thin pork cutlets
  • 4 crusty bread rolls
  • 4 garlic cloves
  • 150 ml white wine
  • 2 tbsp olive oil
  • 1 bay leaf
  • 1 tsp paprika
  • Mustard optional
  • Salt and pepper to taste

Step-by-step method

  1. Season pork slices with garlic, wine, bay, paprika, salt and pepper; marinate in the fridge for 30 minutes.
  2. Heat olive oil in a wide frying pan and sear pork in batches.
  3. Add the marinade, bring it to the boil and cook until pork is thoroughly cooked and tender.
  4. Discard bay leaf and reduce sauce a little, adding water if it dries out.
  5. Fill warm bread rolls with pork, spoon in a little sauce and serve hot.
✦ Cooking tip

Sauce thickness varies between cafés; never reuse raw marinade unless it is thoroughly cooked.

A home-style version; regional and family variations are common. Check cooking times and food doneness before serving.
