Ingredients

  • 500 g stewing beef
  • 400 g pork ribs
  • 1/2 chicken
  • 1 Portuguese chouriço
  • 1 farinheira sausage
  • 1 morcela blood sausage
  • 4 medium potatoes
  • 3 carrots
  • 1 small Savoy cabbage
  • 2 turnips
  • 200 g rice
  • Salt as needed

Step-by-step method

  1. Start by simmering the beef and pork in water, skimming the foam. Add the chicken later and cook until all meats are tender.
  2. Simmer the sausages separately, or add them carefully at the appropriate time so delicate ones do not burst.
  3. Lift out the meats, save the broth and cook carrots, turnips, potatoes and cabbage in the broth, according to their cooking times.
  4. Use some strained broth to cook the rice and check the seasoning.
  5. Slice the meats and sausages and arrange everything on a large platter with the vegetables and rice.
